Summer is definitely upon us! It's oppressively hot today in the south and I'm using that as my excuse to NOT cook dinner. Lucky for me there are a ton of great salad recipes on the FunnySpoon site. I'm making this Italian Artichoke Salad tonight. And, as an added bonus, it's National Eat Your Veggies Day so I can feel good about doing my civic duty while avoiding the stove! :)
