The FunnySpoon Five: After School Snacks

Those after school munchies are one of the biggest culprits of ruining dinner time! The kids come home from school ravenous - and you need to give them energy to do homework, go to sports practice, etc - however, if you pick they wrong snack then dinner is doomed. Here are a couple of simple, healthy and tasty snacks that will tide them over until dinner's ready, but not fill them up too much.

  • Apples! Cut an apple into wedges, then toss with 1 tablespoon of sugar mixed with 2 teaspoons of cinnamon. OR for a warm treat: peel and cut apple into bite sized pieces add a bit of butter, cinnamon & sugar and heat in microwave for about 1 minute. Tastes like the filling of an apple pie! YUM!

  • Tortilla roll-ups. Spread a tortilla with jam and peanut butter, then roll up into a log and cut into 1” pieces. Not PB&J lovers? Try a thin layer of turkey, cheese & ranch dressing.

  • Quesadillas. Take one flour tortilla, grate about ¼ cup of cheese onto it. Top with another tortilla and heat in the microwave for 1 min. or until the cheese is melted. Cut into 6 wedges and serve.

  • Peanut Butter! Dip pretzels, apples or fill celery sticks with a bit of peanut butter for the perfect snack! All of these are filling, full of protein and crunchy – the crunch is what most of us look for in a good snack.

  • Smoothies. Blend ½ cup of milk, ½ cup of yogurt with 1 cups of fruit or berries. For a dairy free option, use soy milk or orange juice.

What are some of your favorite after school (or, ahem, after work) simple and easy snack recipes?

Jillian Michaels of The Biggest Loser recommends a similar apple snack. She says core, peel & slice an apple and place it in a bowl with a bit of water. Microwave for 3 minutes and sprinkle with cinnamon. Only 60 calories. YAY!

Personally, I add a tiny bit of sugar or a half packet of Splenda, but I've got an insane sweet tooth!
