A few days after I've been to the grocery or farmer's market, I generally have a bunch of leftover veggies and meats that are on the verge of going bad. Instead of wasting them, I create an impromptu pizza with pizza dough that I always keep in my freezer. This saves me some cash as well since the minute before I checked out my leftover stash, I was grabbing the phone to call the pizza delivery guy. (He's on my speed dial.)
Sometimes I have leftover pasta sauce or tomatoes to use as the base for my pizza, but if not, I just drizzle a bit of olive oil on the cooked dough and then pile everything on.
Check out one of my recent recipe creations with spinach, cherry tomatoes and sweet Italian sausage:

Great idea! I have never made homemade pizza before, but I know my family would love it if I did. Did you store-bought frozen pizza dough or did you make it? If you made it...would you please post the recipe for us????
I LOVE THIS SITE!
Thanks!
I use store-bought dough. The bakery in my grocery store (HEB-Central Market) makes a great dough, but you have to ask for it behind the counter. I'd try asking your bakery if they do something similar, otherwise a crust like Boboli would work great. Happy pizza-making!
I discovered "Mama Maria's" crusts about 6 months ago, Boboli and Mama Maria's crusts also come in whole wheat, which aren't too bad. I always brush the bottom with olive oil and minced garlic to add extra flavor, really delicious and so easy. Try leftover chicken with BBQ sauce (yummy), add a salad and you've got dinner.
Thanks for the tip! I can't wait to try Mama Maria's crust. Happy cooking!
