When The Hunting Has Ceased

One of the oldest traditions of Easter is painting eggs. They are super fun to do with children and look amazing as place settings for Easter dinner. However, the problem is what to do afterwards ...

If you plan on eating your splendid little Easter eggs, then boiling them perfectly is key. Nobody likes rubbery eggs or grey insides.

  1. Fill your pot with cold water about an inch or two above the tops of your eggs.
  2. As soon as your water comes to a boil, remove from heat and let stand for about 15 minutes.
  3. Drain and run through cold water to stop the cooking process.
  4. Stencil, pattern with paper, draw, dye, or paint!

It is also best to use older eggs, as opposed to fresh ones, because they tend not peel as well.

After the hunting has ceased, you can put those boiled eggs to good use and reuse them in tons of our recipes!

A:We totally hear you. Yesterday's feast was great but we don't exactly want to eat it again. Lucky for us all, we anticipated this would happen and came up with some fun ideas:

Lunch for the Week

The saying is that "Breakfast is the most important meal of the day", but lunch is pretty important too. A solid lunch will get you through those tough afternoon hours at the office without snacking on the goodies lying around, and prepare your body for your post-work workout.

For those of us trying to economize, packing your own lunch is the way to go. But who has time to prepare lunch every morning? The solution is simple: prepare your lunch for the week on Sunday night.

Lemon-steamed chicken breast is a wonderful way to go because the chicken soaks up the aroma of whatever you put with it, and it will keep in the refrigerator for the week! Chicken is a lean protein that will keep you feeling fuller longer. Pair it with broccoli for anti-cancer fighting nutrients, fiber, and calcium, or with green beans and zucchini for a twist. Best part is you can buy everything you need for the week for under $10!

Leftover Salmon?

If you find yourself with some leftover salmon, don't throw it away - get creative with these 10 tasty things to do with salmon:

Grilled salmon, hot dishes:

  • Salmon pasta: cook up some pasta and grill some salmon, put the two together and you have a meal in less than 15 minutes. Adding some veggies and cheese can never hurt! Or use it in our Smoked Salmon Penne recipe:



  • Salmon quiche: if you’re making a veggie quiche and want to spice it up a little, why not throw in some grilled salmon pieces?

  • Salmon pizza: for those of you whose favorite pizza toppings are tuna or anchovies might want to try a salmon topping!

  • Salmon burger: the classic salmon burger. Why eat beef burgers when salmon burgers are equally tasty and much healthier?

  • Salmon rice: spice up that plain white rice! Serve with some green salad and you’ve got a meal!

  • Salmon bites: imagine pigs in a blanket using salmon instead. Much tastier, much healthier.


  • Grilled salmon, cold dishes:

  • Salmon salad: you can make a salmon salad as simple or as extravagant as you want. After combining grilled salmon pieces and green salad you can add veggies and personal favorites!

  • Salmon sandwich: similar to a salmon burger with a mere change of bread, condiments and temperature!


  • And don't forget raw salmon, which makes for great appetizers:

  • Salmon on toast: a classic Scandinavian dish so if you feel like a Scandy night or are hosting Scandy guests this dish will not fail you!

  • Salmon rolls: simply spread cream cheese on strips of raw salmon, roll it up, cut into bits and serve! Probably the simplest yet best appetizer I’ve ever been served.


  • For the sweet tooth, unfortunately salmon cookies and cakes are not suggested and have yet to be proven tasty but experimentation is always encouraged and let us know if you have any breakthroughs!

    French Bread Pizza - Many Different Ways!

    One of my friends came over the other day and we made French Bread Pizzas, a recipe she had submitted to FunnySpoon.com. They were so tasty and so easy! And the perfect thing to make when a friend comes over - they're not too involved, they don't mess up the whole kitchen, and most importantly, they're ready in just a few minutes!





    There was a little bit of baguette leftover so the next day I ended up making them again. I still had some cheese and sauce leftover as well, and had some hamburger meat to use up. So I browned the ground beef, and then finished making the pizzas the same way I did the day before. So easy! And it opened up a world of possibilities - I mean, I always tend to have cheese and tomato sauce on hand, so the next time I have meat or veggies to get rid of, all I need to do is buy a baguette and make a French bread pizza out of it!

    Mamma Mia!

    A few days after I've been to the grocery or farmer's market, I generally have a bunch of leftover veggies and meats that are on the verge of going bad. Instead of wasting them, I create an impromptu pizza with pizza dough that I always keep in my freezer. This saves me some cash as well since the minute before I checked out my leftover stash, I was grabbing the phone to call the pizza delivery guy. (He's on my speed dial.)

    Sometimes I have leftover pasta sauce or tomatoes to use as the base for my pizza, but if not, I just drizzle a bit of olive oil on the cooked dough and then pile everything on.

    Saving Leftover Chicken Broth

    I don't know about you, but I play it safe when it comes to the guidelines on food products. That means that generally I can look in my fridge and find at least four open packages of chicken or vegetable broth that all read "Use within a week of opening." I can never remember how long it's been since I opened a container of broth! Rather than taste it or dump out what may be perfectly good broth, I just open another and promise myself I'll check the others when I'm not in such a rush. Then I'm left with five open containers of broth!

    Now, instead of cluttering my fridge and wasting all that money, I immediately pour the extra broth into ice cube trays and freeze it. Next time a recipe calls for broth, I can pull out exactly what I need.

    Baguettes in the trash? No way!

    There's nothing like a fresh baguette. It seriously makes every meal better. However, what do you do when you're finished with dinner, half the baguette is left and you know you won't eat it for dinner tomorrow?

    1) Make crostinis. So easy. Thinly slice the baguette (about 1/4 inch thick). Lay them flat on a cookie sheet and lightly brush with a mixture of olive oil, garlic powder, onion powder and dried chives. Bake at 400 for about 6 minutes, flip over lightly brush the mixture on the other side and bake for another 4-6 minutes. Let them cool and store in a ziploc baggie. They'll last for weeks and are great with cheese, hummus and just about any dip.

    2) Make french toast. This will seriously be the best french toast ever. Slice the baguette the night before - I like the slices to be about 1/2 inch or so thick. Beat 2-3 eggs, about 1/2 cup of milk (may need a bit more), a splash of vanilla (about 1 tsp) and a few dashes of cinnamon - to taste of course. Run the baguette through the egg mixture and cook on a buttered medium-high skillet or griddle. Serve with a maple syrup. Delish!

    3) Make bread crumbs. These will be perfect for a Thanksgiving stuffing and they'll make any recipe that much tastier because the breadcrumbs will be fresh! Tear the baguette into small pieces and spread it out on a cookie sheet. Sprinkle with garlic powder, thyme or rosemary, sea salt and fresh ground pepper.
